The objective of this observation phase is to get information based on real practices, in order to go beyond discourses and representations.
The main questions that the study has to focus on are:
 The context of cooking (time, place) and sourcing
 The relation between what people actually eat and what they would like to eat
 The uses and wishes regarding vegetables saucing and seasoning
