Abstract

The functions of the Supply Chain in the Tourism sector, and particularly in the Hotel industry, are a special case, as this is a "sector providing simultaneous multiple complementary services in a defined space with particular management conditions." Five luxury or four-star hotels, operating in the regions of Thessaloniki, Halkidiki, Pieria, Evros, and Corfu, which exhibit significant tourism and hotel activity, were selected as the field of research study for this paper. The main objectives of this paper are, firstly, to highlight the Strengths in the Operation of the selected hotels that are due to the correct applications and methods of their Supply Chain compared to one of them, which, based on specific criteria, is identified as the model of Integrated Supply Chain operation. Secondly, to identify the Weaknesses in their Operation compared to the specific model that affect their productivity and result in the reduction of customer service levels and, more broadly, the overall sustainability of the businesses.
